This Week: Low Carb Pancakes

Everybody loves pancakes. But having them before practice? Not your best idea. But have you ever heard of low carb pancakes? Easy to make and perfect to start your day with a quick and healthy breakfast.

What you need:

1 banana
2 eggs
50g/ 1.7 oz grounded almonds
50ml/ 1.7 oz milk
1 box blueberries/ strawberries
1 spoon rapeseed oil
1 spoon of honey

How to make them:

This is easy and quick and will not take you more than 10 minutes. Simple as it is, you mash the bananas and mix them together with the eggs and the milk. If you have the feeling that your dough becomes too thick, simply add a teaspoon of milk. If you’re training hard at the moment, you can add a little protein powder, in order to gain an extra portion of power for the day.

Take a big spoon of the dough and press it into the pan. The pancake should not be thicker than your pinky. Fry it on high temperature for roughly a minute on each side, put it on a plate and let it rest in a pre-heated oven (100°C/212°F) until you have finished all the dough.

Wash the berries and mash them in a bowl or use them as they are. If you have a sweet tooth, you can add a teaspoon of honey and mix it in. There you go – fast, healthy and delicious!
